Vendace roe with Caballo Loco

On New Year’s Eve it is time to celebrate and have a toast! Spoonful of vendace roe with elegant sparkling wine crowns the memorable culmination of the year 2022!

Spoonful of vendace roe:
rye bread
vendace roe
lemon mayonnaise
sparkling wine

Crumble rye bread into tiny crombs and put some on a spoon. Moisten bread crombs with wine. Put spoonful of vendace roe on top. Decorate with dab of lemon mayonnaise and small dill sprig.

Glass of wine:
Caballo Loco Grand Cru Brut Nature. Chile, Bio Bio Valley. Chardonnay 50% & Pinor Noir 50%.
Quality sparkling wine made with the traditional method of the second fermentation in the bottle. Bright light golden color, dry, exra brut (sugar 2.5 grams/liter), delicate fruits on palate, balanced with fine mousse and refreshing, rousing finish. Over 30 months of contact with its lees gives wine autolytic, toasty aromas with some yeasty and spicy notes combined with nutty character.
